Pot Roast over Mashed Potatoes

🛒 What You’ll Need

  • 3–4 lbs Beef Chuck Roast (the best cut for shredding!) 🥩✨
  • 2 lbs Yukon Gold or Russet potatoes (for the mash) 🥔
  • 1 lb Baby carrots or thick-sliced carrots 🥕
  • 1 Large onion, quartered 🧅
  • 3 cups Beef broth 🥣
  • ½ cup Red wine (optional, for a deep, rich flavor!) 🍷
  • 3 cloves Garlic, minced 🧄
  • 2 tbsp Tomato paste 🍅
  • 3 tbsp Butter & ¼ cup Heavy cream (for the potatoes) 🧈🥛
  • Fresh Thyme & Rosemary 🌿
  • Salt & Black pepper to taste 🧂🖤

👩‍🍳 Instructions

  1. The Perfect Sear: Season your roast generously with salt and pepper. In a large Dutch oven or pot, heat oil over high heat. Sear the beef for 4-5 minutes per side until a deep brown crust forms. Remove and set aside. 🥩🔥💨
  2. Sauté the Aromatics: Reduce heat to medium. Add the onions and carrots to the pot, cooking for 3–5 minutes. Stir in the garlic and tomato paste for another minute until fragrant. 🧅🥕🧄
  3. Deglaze: Pour in the red wine (or a splash of broth) and scrape up all those delicious brown bits from the bottom of the pan! 🍷🥄✨
  4. The Slow Simmer: Return the beef to the pot. Add the beef broth and fresh herbs. 🌿🌊
    • Oven Method: Cover and bake at 300°F for 3–4 hours.
    • Slow Cooker: Cook on Low for 8 hours or High for 4–5 hours.
  5. Mash Time: While the beef is finishing, boil your potatoes in salted water until tender. Drain and mash with plenty of butter, heavy cream, and salt until silky smooth. 🥔🧈🥛🌪️
  6. The Gravy: Once the beef is fork-tender as seen in the photo, remove it and the veggies. Simmer the remaining liquid over medium heat (add a cornstarch slurry if you want it extra thick!) until it becomes a rich gravy. 🍲📈🤤
  7. Serve: Place a big scoop of mashed potatoes in a bowl, top with shredded beef and carrots, and ladle that liquid gold gravy all over the top! 🍽️😋🧤✨

🔥 Pro Tips:

  • The “Rest” Secret: Let your roast rest for 10 minutes before shredding. This keeps the meat incredibly juicy instead of letting all the flavor run out! 🥩🛡️💎
  • Potato Hack: Use Yukon Gold potatoes for the mash if you want a naturally buttery flavor and a smoother, less grainy texture! 🥔💛🎯
