👩🍳 Instructions
- Preheat & Prep: Heat your oven to 350°F. Grease and flour two 9-inch round cake pans. 🌡️🔥
- Mix the Dry: In a large bowl, whisk together flour, sugar, cocoa, baking soda, baking powder, and salt. 🌪️🌾🍫
- Add the Wet: Add eggs, buttermilk, oil, and vanilla. Beat on medium speed for 2 minutes. Stir in the hot coffee by hand (the batter will be thin!). 🥣☕✨
- Bake: Pour batter into pans and bake for 30–35 minutes. Let cool completely before frosting. ⏲️📈🍰
- The Famous Frosting: In a saucepan, combine evaporated milk, sugar, egg yolks, butter, and vanilla. Cook over medium heat, stirring constantly, until thickened (about 12 minutes). 🍯🔥🥄
- The Crunch: Remove from heat and stir in the coconut and pecans. Let the frosting cool until it reaches a spreadable consistency. 🥥🥜🤝
- Assemble: Place one cake layer on a plate. Spread a thick layer of frosting on top. Add the second layer and cover the top (and sides if you like!) with the remaining frosting as seen in the photo! 🍰👑✨
🔥 Pro Tips:
- The “Coffee” Secret: Don’t worry, your cake won’t taste like coffee! The hot liquid blooms the cocoa powder, making the chocolate flavor incredibly intense and rich. ☕🛡️💎
- Toasting the Nuts: For extra flavor, toast your pecans in a dry pan for 3-5 minutes before adding them to the frosting! 🥜🔥🎯
