Classic Pot Roast with Carrots and Potatoes

🛒 What You’ll Need

  • 3–4 lb Chuck roast (well-marbled for the best flavor!) 🥩✨
  • 2 tbsp Olive oil 🫒
  • 1 lb Carrots, peeled and cut into thick chunks 🥕
  • 1.5 lbs Potatoes (Russet or Yukon Gold), peeled and quartered 🥔
  • 1 Large onion, wedged 🧅
  • 3 cloves Garlic, minced 🧄
  • 2 cups Beef broth 🥣
  • 1 cup Red wine (optional, or extra broth) 🍷
  • 2 tbsp Tomato paste 🍅
  • 2 Bay leaves 🍃
  • 3 sprigs Fresh thyme or rosemary 🌿
  • Salt & Coarse black pepper to taste 🧂🖤

👩‍🍳 Instructions

  1. The Sear (Don’t skip this!): Pat the roast dry and season heavily with salt and pepper. In a large Dutch oven or heavy pot, heat oil over medium-high heat. Sear the beef for 5–7 minutes per side until a deep golden crust forms. Remove and set aside. 🥩🔥💨
  2. Deglaze: Add the onions to the pot for 2 minutes, then stir in the garlic and tomato paste. Pour in the wine (or a splash of broth) and scrape up all those delicious brown bits from the bottom. 🧅🍷🥄
  3. Combine: Place the roast back into the pot. Add the beef broth, bay leaves, and fresh herbs. The liquid should come about halfway up the side of the meat. 🥣🌿🌊
  4. Slow Cook: * Oven: Cover and bake at 300°F for about 3–4 hours. ⏲️🔥
    • Slow Cooker: Transfer everything to your crockpot and cook on Low for 8 hours. ⏲️❄️
  5. Add the Veggies: About 1.5 hours before the end of the cooking time (or halfway through for a slow cooker), tuck the carrots and potatoes around the roast as seen in the photo! 🥕🥔🎯
  6. The Finish: Once the beef shreds easily with a fork, remove the meat and veggies. Strain the liquid and simmer it in a pan if you want a thicker gravy. 🥄👑✨
  7. Serve: Place the roast in the center of a large platter, surrounded by the tender veggies, and ladle that rich gravy over everything. 🍽️😋🧤

🔥 Pro Tips:

  • The “Resting” Secret: Let the roast rest for at least 15 minutes before shredding or slicing. This keeps it from drying out! 🥩🛡️💎
  • Thick Veggies: Cut your potatoes and carrots into large, uniform chunks. If they are too small, they will turn to mush during the long cook time! 🥕🥔📐🎯
