Keto Shrimp & Sausage Veggie Skillet
🛒 What You’ll Need
- 1 lb Large shrimp, peeled and deveined 🍤✨
- 12 oz Smoked sausage or Andouille, sliced into rounds 🍖
- 2 Medium zucchinis, sliced into half-moons 🥒
- 8 oz Fresh mushrooms, sliced 🍄
- 1 Bell pepper (any color!), sliced 🫑
- 3 tbsp Olive oil or avocado oil 🫒
- 3 cloves Garlic, minced 🧄
- 1 ½ tsp Cajun or Old Bay seasoning 🧂🔥
- Salt & Black pepper to taste 🧂🖤
- Fresh parsley & Lemon wedges for serving 🌿🍋
👩🍳 Instructions
- Prep the Shrimp: In a small bowl, toss your shrimp with 1 tbsp of oil and half of the Cajun seasoning. Set aside. 🍤🥣
- Sear the Sausage: Heat a large cast-iron or non-stick skillet over medium-high heat with 1 tbsp oil. Add the sliced sausage and cook for 3–4 minutes until beautifully browned and crispy on the edges. Remove and set aside. 🍳🔥🤎
- Vibrant Veggies: In the same pan, add the remaining oil. Toss in the zucchini, mushrooms, and bell peppers. Sauté for 5–7 minutes until the veggies are tender-crisp and have those gorgeous sear marks as seen in the photo! 🥒🍄🫑🌪️
- Flavor Burst: Add the minced garlic to the veggies and cook for just 1 minute until fragrant. 🧄✨
- Cook the Shrimp: Push the veggies to the side of the pan (or remove them) and add the shrimp. Cook for 2–3 minutes per side until pink and opaque. 🍤📉
- The Big Toss: Add the sausage back into the skillet. Toss everything together so the flavors meld and the Cajun spices coat every bite. Season with extra salt and pepper if needed! 🥘🌪️👑
- Serve: Squeeze fresh lemon juice over the top and garnish with parsley. Dig in straight from the pan! 🍽️😋🧤✨
🔥 Pro Tips:
- The “High Heat” Secret: Keep the pan hot! A good sear on the sausage and zucchini is what gives this dish that “roasted” depth of flavor without an oven. 🥘🛡️💎
- Don’t Overcook: Shrimp cook incredibly fast. Take them off the heat as soon as they turn C-shaped and opaque to keep them juicy and tender! 🍤🚫🎯
