Classic Pot Roast with Carrots and Potatoes
🛒 What You’ll Need
- 3–4 lb Chuck roast (well-marbled for the best flavor!) 🥩✨

- 1 lb Carrots, peeled and cut into thick chunks 🥕
- 1.5 lbs Potatoes (Russet or Yukon Gold), peeled and quartered 🥔

- 2 cups Beef broth 🥣
- 1 cup Red wine (optional, or extra broth) 🍷
- 2 tbsp Tomato paste 🍅
- 2 Bay leaves 🍃
- 3 sprigs Fresh thyme or rosemary 🌿
- Salt & Coarse black pepper to taste 🧂🖤

- The Sear (Don’t skip this!): Pat the roast dry and season heavily with salt and pepper. In a large Dutch oven or heavy pot, heat oil over medium-high heat. Sear the beef for 5–7 minutes per side until a deep golden crust forms. Remove and set aside. 🥩🔥💨
- Deglaze: Add the onions to the pot for 2 minutes, then stir in the garlic and tomato paste. Pour in the wine (or a splash of broth) and scrape up all those delicious brown bits from the bottom. 🧅🍷🥄
- Combine: Place the roast back into the pot. Add the beef broth, bay leaves, and fresh herbs. The liquid should come about halfway up the side of the meat. 🥣🌿🌊
