Coconut Cake

🛒 What You’ll Need

For the Fluffy Cake:

  • 2 ½ cups All-purpose flour 🌾
  • 1 ½ cups Granulated sugar 🍬
  • 1 cup Unsalted butter, softened 🧈
  • 1 cup Coconut milk (full fat for the best flavor!) 🥥🥛

  • 1 (8 oz) block Cream cheese, softened 🧀
  • ½ cup Unsalted butter, softened 🧈
  • 4 cups Powdered sugar ☁️
  • 2 tbsp Coconut milk or heavy cream 🥛
  • 2 cups Sweetened shredded coconut (for the outside!) 🥥❄️

👩‍🍳 Instructions

  1. Prep: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. ⏲️🔥
  2. Cream the Butter: In a large bowl, beat the softened butter and sugar until light and fluffy. Stir in the vanilla and coconut extracts. 🧈🍬🌪️
  3. Dry & Wet: In a separate bowl, whisk the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, alternating with the coconut milk. 🌾🥥🥛🤝
  4. Fold in the Whites: In a clean bowl, beat the egg whites until stiff peaks form. Gently fold them into the batter to keep it airy and light. 🥚☁️🥣
  5. Bake: Divide the batter evenly between the pans. Bake for 25–30 minutes or until a toothpick comes out clean. Let the cakes cool completely! ⏲️🥨🍰
  6. Whip the Frosting: Beat the cream cheese and butter until smooth. Gradually add powdered sugar and coconut milk until it’s thick and spreadable. 🧀☁️🌪️
  7. Assemble: Place one cake layer on a stand. Spread a thick layer of frosting, then top with the second cake. Frost the entire outside of the cake. 🍰🤝🥄
