Mediterranean Ground Beef Stir Fry
🛒 What You’ll Need
- 1 lb Lean ground beef 🥩
- 2 Zucchini, chopped into half-moons 🥒
- 1 Red onion, sliced or chunky diced 🧅
- 1 Bell pepper (orange or yellow), sliced 🫑
- 1 cup Cherry tomatoes, halved 🍅
- 3 cloves Garlic, minced 🧄
- 2 tbsp Olive oil 🫒
- 1 tsp Dried oregano & 1 tsp Dried basil 🌿
- Handful of fresh parsley, chopped 🍃
- Salt & Red pepper flakes to taste 🧂🌶️
- Optional: Feta cheese crumbles for topping! 🧀
👩🍳 Instructions
- Brown the Beef: In a large skillet or wok, heat 1 tbsp of olive oil over medium-high heat. Add the ground beef and cook until browned and crumbled. Drain any excess fat. 🥩🔥
- Sauté the Aromatics: Add the remaining olive oil to the pan with the onions and bell peppers. Cook for 3–4 minutes until they start to soften. 🧅🫑
- Add the Greens: Toss in the zucchini and minced garlic. Stir-fry for another 4–5 minutes. You want the zucchini tender but still having a bit of a bite! 🥒🧄✨
- The Zest: Add the cherry tomatoes, dried oregano, basil, salt, and red pepper flakes. Cook for 2 more minutes until the tomatoes just begin to burst. 🍅🌿🌪️
- The Finish: Turn off the heat and stir in the fresh parsley. The residual heat will wilt it perfectly and release all that fresh aroma! 🍃🤤
- Serve: Enjoy it as is for a low-carb meal, or serve it over a bed of quinoa, cauliflower rice, or warm pita bread! 🍽️🥗
