- 2 ½ cups All-purpose flour 🌾

For the Frosting:
- 8 oz Cream cheese, softened ☁️
- ½ cup Butter, softened 🧈
- 3-4 cups Powdered sugar ☁️
- 1 tsp Coconut extract 🥥

- Prep: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. 🌡️🥘
- Cream Butter & Sugar: In a large bowl, beat the softened butter and sugar together until light and fluffy. 🥣🌪️
- Add Eggs: Add eggs one at a time, beating well after each addition. Stir in the vanilla and coconut extracts. 🥚✨
- Dry Meets Wet: Gradually add the flour, baking powder, and salt, alternating with the coconut milk. Mix until just combined (don’t overmix!). 🥛🌾
- The Fold: Gently fold in ½ cup of shredded coconut into the batter. 🥥🥄
- Bake: Divide the batter evenly between the pans. Bake for 30–35 minutes or until a toothpick comes out clean. Let them cool completely. 🥨⏲️
- Frost & Decorate: Beat the frosting ingredients together until smooth. Frost between the layers and all over the outside. 🍰🎨
