One of my favorite recipes for busy days! It’s quick to make and tastes great!

If there’s one thing I love about autumn, it’s the food that goes with it. Slow cooker cheese tortellini is a family favorite. It’s perfect for those hectic weekdays when you’re juggling work, kids, and everything else life throws at you. This dish is creamy, cheesy, and very filling, making it a meal we love to have when we want something indulgent but easy to prepare. Beside, who doesn’t love the convenience of a slow cooker? Just set it and forget it!
This tortellini pairs perfectly with a simple green salad drizzled with balsamic vinaigrette. It also pairs perfectly with garlic bread or a crusty baguette to soak up all that cheesy goodness. To add a touch of freshness, consider adding steamed vegetables like broccoli or green beans.

Servings: 6

Ingredients 1 package (20 ounces) refrigerated cheese tortellini 1 pound ground beef or Italian sausage 1 jar (24 ounces) marinara sauce 1 can (15 ounces) diced tomatoes, drained 2 cups shredded mozzarella cheese 1 cup shredded Parmesan cheese 1 cup heavy cream 1 teaspoon garlic powder 1 teaspoon onion powder Salt and pepper to taste Chopped fresh basil or parsley for garnish (optional)
Preparation Method

In a skillet over medium heat, brown the ground beef or Italian sausage until it’s browned and no longer pink. Drain off the excess fat.
In a slow cooker, add the cooked meat, marinara sauce, and diced tomatoes. Mix to combine.
Add the cheese tortellini to the slow cooker and gently stir to coat the tortellini with the sauce mixture. Sprinkle with garlic powder, onion powder, salt, and pepper, then pour in the heavy cream. Gently mix everything together.
Cover and simmer for 4 hours.
About 30 minutes before serving, sprinkle with grated mozzarella and Parmesan cheese. Cover again and let the cheese melt into sticky perfection.
When everything is hot and bubbling, stir at the end. Serve hot, garnished with fresh basil or parsley if desired. Varieties and Tips
For a healthier touch, swap the heavy cream for half-and-half or milk. If you’re a vegetarian, skip the meat and add a can of chickpeas or sautéed mushrooms for an earthy flavor. Spice lovers can also add a pinch of red pepper flakes for a touch of heat. The beauty of this dish lies in its versatility – you can experiment with different types of tortellini or add your favorite vegetables, such as spinach or peppers. Resources Print this recipe
