Grandma’s Zucchini & Egg Wonder 🥒🍳
Instructions
- Prepare the Zucchini: Grate the zucchini and place it in a bowl. Add a pinch of salt and let it sit for 5 minutes. Squeeze it thoroughly using a colander or a clean kitchen cloth to remove all excess liquid.
- Mix the Main Ingredients: In a separate bowl, whisk the eggs with salt, pepper, and your choice of spices (such as garlic powder, oregano, or turmeric). Add a tablespoon of flour and mix well until the batter is smooth.
- Combine: Add the drained zucchini to the egg and flour mixture. Stir until well combined.
- Prepare the Pan: Heat a non-stick frying pan with a small amount of oil. Pour in half of the mixture and spread it evenly to cover the bottom of the pan.
- Add the Filling: Place layers of ham and cheese slices over the first layer, then sprinkle with chopped chives.
- Cover and Brown: Pour the remaining mixture over the top, spreading it evenly. Fry over medium heat until the bottom is golden brown. Using a plate or a lid, carefully flip the omelet and brown the other side.
- Serve: Remove from heat and serve immediately. This dish pairs perfectly with a fresh salad or brown rice.
